Low Carb Beef Stew

2 Tbsp olive oil
2 1/2 to 3 lbs stewing beef, trimmed of fat, cut to 3/4" pieces
1 medium onion diced
1 small bag of baby carrots, whole or sliced (your choice)
about 8 to 10 medium white-cap mushrooms, sliced
7-8 cups of beef broth
Seasoning to taste ( I used Emeril's or Mrs Dash, about 1-2 tsp, plus a tsp paprika)

Heat olive oil in a large stock pot, add beef cubes and brown, stirring frequently.
Add broth, onion, and seasonings, and simmer for about an hour or until beef begins to get tender.
Add carrots and simmer another 30 minutes, or until carrots are desired tenderness.

Serves 8
About 410 calories.

Serving suggestion:
Add 1/4 cup of prepared quinoa (about 1/3 of a serving) at serving. (Add about 57 calories)

The stew alone is very low-carb. Adding the quinoa, while adding carbs, also adds protein and nutrients, plus flavor and texture. The quinoa make this seem "thicker", and more like stew than soup.
